Ingredients

- 2 lbs beef stew meat
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef and cook until browned on all sides.
- Add the chopped onions and garlic, cooking until they are soft.
- Stir in the carrots and celery and let cook for a few more minutes.
- Pour in the beef broth and add the potatoes.
- Sprinkle in the herbs and bring to a gentle boil.
- Reduce the heat, cover the pot, and let it simmer for about 60 minutes.
- Taste and adjust seasoning as needed before serving.
Notes
For a thicker stew, mix a tablespoon of cornstarch with water and add it in the last few minutes of cooking.
