Ingredients

  • 2 lbs beef stew meat
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef and cook until browned on all sides.
  3. Add the chopped onions and garlic, cooking until they are soft.
  4. Stir in the carrots and celery and let cook for a few more minutes.
  5. Pour in the beef broth and add the potatoes.
  6. Sprinkle in the herbs and bring to a gentle boil.
  7. Reduce the heat, cover the pot, and let it simmer for about 60 minutes.
  8. Taste and adjust seasoning as needed before serving.

Notes

For a thicker stew, mix a tablespoon of cornstarch with water and add it in the last few minutes of cooking.
