Ingredients

  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 6 oz white chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking dish with parchment paper.
  2. Melt the white chocolate until smooth.
  3. In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until creamy.
  4. Add the melted white chocolate and mix well.
  5. Incorporate the eggs one at a time on low speed.
  6. Pour half of the mixture into the prepared baking dish.
  7. Dot the top with fresh raspberries and cover with the remaining cheesecake mixture.
  8. Swirl the berries into the mixture slightly.
  9. Bake for about 30 minutes or until the center is set.
  10. Let the bars cool completely before cutting into squares.
