- 8 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 6 oz white chocolate, melted
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 325°F (160°C) and line a baking dish with parchment paper.
- Melt the white chocolate until smooth.
- In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until creamy.
- Add the melted white chocolate and mix well.
- Incorporate the eggs one at a time on low speed.
- Pour half of the mixture into the prepared baking dish.
- Dot the top with fresh raspberries and cover with the remaining cheesecake mixture.
- Swirl the berries into the mixture slightly.
- Bake for about 30 minutes or until the center is set.
- Let the bars cool completely before cutting into squares.
Notes
Use softened cream cheese for a smoother texture. Store cooled bars in the refrigerator for up to five days or freeze for up to three months.
