  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup non-dairy milk (almond, oat, or soy)
  • Optional add-ins: ½ cup vegan chocolate chips, chopped nuts (walnuts, pecans), or berries

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, mash bananas until mostly smooth with a few small lumps.
  3. Add melted coconut oil, sugar, flax eggs, and vanilla extract. Whisk until smooth and combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Stir in non-dairy milk gently to achieve a smooth, thick batter.
  7. Fold in optional add-ins like chocolate chips, nuts, or berries.
  8. Pour batter into the prepared pan and spread evenly.
  9. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
