- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon (optional)
- ½ cup non-dairy milk (almond, oat, or soy)
- Optional add-ins: ½ cup vegan chocolate chips, chopped nuts (walnuts, pecans), or berries
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a large mixing bowl, mash bananas until mostly smooth with a few small lumps.
- Add melted coconut oil, sugar, flax eggs, and vanilla extract. Whisk until smooth and combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Stir in non-dairy milk gently to achieve a smooth, thick batter.
- Fold in optional add-ins like chocolate chips, nuts, or berries.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
