Deliciously soft and chewy almond flour cookies with chocolate chips, perfect for a gluten-free treat.
Ingredients

- 2 cups almond flour (superfine blanched almond flour)
- 1 large egg (room temperature)
- 1/4 cup butter (or vegan butter, melted)
- 3 tbsp powdered sweetener
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (unsweetened)
Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix the almond flour, powdered sweetener, and baking powder in a large bowl.
- Add the melted butter, egg, and vanilla extract. Mix until well combined.
- Incorporate the chocolate chips using a silicone spatula.
- Use a small cookie scoop to form 12 cookie balls. Slightly press them into a cookie shape.
- Bake the cookies for 10 to 12 minutes, or until they just begin to brown on top.
- Remove from the oven and allow to cool on the baking sheet for 10 minutes, then transfer to a cooling rack.
Notes
For variations, consider adding cocoa powder for chocolate cookies or mixing in different types of chocolate chips.
