Description

Deliciously soft and chewy almond flour cookies with chocolate chips, perfect for a gluten-free treat.


Ingredients

  • 2 cups almond flour (superfine blanched almond flour)
  • 1 large egg (room temperature)
  • 1/4 cup butter (or vegan butter, melted)
  • 3 tbsp powdered sweetener
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (unsweetened)

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Mix the almond flour, powdered sweetener, and baking powder in a large bowl.
  3. Add the melted butter, egg, and vanilla extract. Mix until well combined.
  4. Incorporate the chocolate chips using a silicone spatula.
  5. Use a small cookie scoop to form 12 cookie balls. Slightly press them into a cookie shape.
  6. Bake the cookies for 10 to 12 minutes, or until they just begin to brown on top.
  7. Remove from the oven and allow to cool on the baking sheet for 10 minutes, then transfer to a cooling rack.

Notes

For variations, consider adding cocoa powder for chocolate cookies or mixing in different types of chocolate chips.
