Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup diced onions
- 2 cloves minced garlic
- 1/2 cup fresh or pickled jalapeños, diced
- 8 oz cream cheese
- 4 cups chicken broth
- 1 cup shredded cheese
- 2 tablespoons oil
Instructions
- In a large pot, heat oil over medium heat.
- Cook the diced onions for about 5 minutes until soft.
- Add the minced garlic and jalapeños, cooking for 1 more minute.
- Stir in the chicken breasts and mix everything well.
- Pour in the chicken broth and let it simmer for 20 minutes until chicken is cooked.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the cream cheese until melted and combined.
- Add shredded cheese, stirring until creamy and serve hot.
Notes
For smoother texture, use an immersion blender. Adjust spice level to your liking.
