Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup diced onions
  • 2 cloves minced garlic
  • 1/2 cup fresh or pickled jalapeños, diced
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 cup shredded cheese
  • 2 tablespoons oil

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Cook the diced onions for about 5 minutes until soft.
  3. Add the minced garlic and jalapeños, cooking for 1 more minute.
  4. Stir in the chicken breasts and mix everything well.
  5. Pour in the chicken broth and let it simmer for 20 minutes until chicken is cooked.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in the cream cheese until melted and combined.
  8. Add shredded cheese, stirring until creamy and serve hot.

Notes

For smoother texture, use an immersion blender. Adjust spice level to your liking.
