- 1 pound fresh shrimp, peeled and deveined, tails on
- 1 cup tempura flour
- 1 egg
- 1 cup cold water
- Vegetable oil for frying
- Soy sauce or dipping sauce of choice
Instructions
- Pat the shrimp dry with a paper towel.
- In a bowl, mix cold water, egg, and tempura flour gently until the batter is lumpy.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Dip each shrimp in the batter and carefully place them in the hot oil.
- Fry until golden brown, about 2-3 minutes, then transfer to a plate lined with paper towels.
- Repeat until all the shrimp are cooked.
- Serve hot with soy sauce or a dipping sauce of your choice.
Notes
For perfect tempura, keep the batter cold and do not overcrowd the pot while frying.
