Ingredients

- 1 lb carrots (baby or larger, peeled and cut)
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, cutting larger ones into uniform pieces.
- Place the carrots on a baking sheet and drizzle with olive oil.
- Season with salt and pepper, and toss to coat.
- Spread the carrots evenly on the baking sheet.
- Bake for 25-30 minutes, stirring halfway, until tender and caramelized.
- Check for doneness by piercing with a fork. Serve warm.
