- 1 cup pumpkin puree
- 8 oz cream cheese
- 2 cups all-purpose flour
- 1 cup sugar
- 3 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat pumpkin puree, sugar, and eggs until smooth.
- Gradually add dry ingredients into the wet mixture, stirring gently.
- For the filling, mix cream cheese with sugar and vanilla until smooth.
- In a greased loaf pan, spread half of the pumpkin batter, followed by the cream cheese mixture, then top with remaining pumpkin batter.
- Bake for about 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing.
Notes
Wrap cooled bread in plastic wrap or aluminum foil for freshness. Can be served warm with butter or powdered sugar.
