Description

These moist and soft Pumpkin Chocolate Chip Muffins combine the warm flavors of fall with the delight of chocolate.


Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the wet ingredients: pumpkin puree, sugar, eggs, and vegetable oil until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  5. Fold in the chocolate chips until evenly distributed.
  6. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, serve with cream cheese frosting or butter. These muffins can also be frozen for up to 3 months.
