- 1 cup pumpkin puree
- 2 large eggs
- 1 cup milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
- In a large mixing bowl, whisk together pumpkin puree, eggs, milk, maple syrup, and vanilla extract until smooth.
- Stir in the rolled oats, cinnamon, pumpkin pie spice, baking powder, and salt until well combined.
- If desired, fold in chopped nuts.
- Pour the mixture into the baking dish and spread it evenly.
- Bake for 30 to 35 minutes until the top is golden brown.
- Let it cool for 10 minutes before slicing into squares and serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days. Reheat in the microwave or oven. This dish is also freezable for later enjoyment.
