  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
  2. In a large mixing bowl, whisk together pumpkin puree, eggs, milk, maple syrup, and vanilla extract until smooth.
  3. Stir in the rolled oats, cinnamon, pumpkin pie spice, baking powder, and salt until well combined.
  4. If desired, fold in chopped nuts.
  5. Pour the mixture into the baking dish and spread it evenly.
  6. Bake for 30 to 35 minutes until the top is golden brown.
  7. Let it cool for 10 minutes before slicing into squares and serving.

Notes
