- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, peeled and diced
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and grease your muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix melted butter, milk, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in diced peaches and cinnamon until evenly distributed.
- Fill each muffin cup halfway with the batter, add more diced peaches on top, then fill to the rim with remaining batter.
- Bake for 25-30 minutes or until golden brown.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
