  • 1/2 cup unsalted butter (melted)
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and diced
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, milk, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in diced peaches and cinnamon until evenly distributed.
  6. Fill each muffin cup halfway with the batter, add more diced peaches on top, then fill to the rim with remaining batter.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
