A comforting and easy-to-make soup that combines all the flavors of classic lasagna in one pot.


Ingredients

  • 1 lb ground meat (beef or turkey)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups vegetable or chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Fresh basil or parsley for garnish

Instructions

  1. Heat a large pot over medium heat and add the ground meat. Cook until browned.
  2. Add the chopped onion and minced garlic, stirring until fragrant.
  3. Mix in the canned tomatoes, tomato sauce, and broth. Season with Italian seasoning.
  4. Stir in the broken lasagna noodles and simmer for 15-20 minutes, until the noodles are tender.
  5. Remove from heat and mix in the ricotta cheese until melted and blended.
  6. Top with mozzarella and Parmesan cheese, and garnish with fresh herbs before serving.

Customize each bowl with additional cheese or toppings like red pepper flakes or sour cream.
