Ingredients

- 1 lb ground meat (beef or turkey)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups vegetable or chicken broth
- 8 oz lasagna noodles, broken into pieces
- 2 tsp Italian seasoning
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Fresh basil or parsley for garnish
Instructions
- Heat a large pot over medium heat and add the ground meat. Cook until browned.
- Add the chopped onion and minced garlic, stirring until fragrant.
- Mix in the canned tomatoes, tomato sauce, and broth. Season with Italian seasoning.
- Stir in the broken lasagna noodles and simmer for 15-20 minutes, until the noodles are tender.
- Remove from heat and mix in the ricotta cheese until melted and blended.
- Top with mozzarella and Parmesan cheese, and garnish with fresh herbs before serving.

Customize each bowl with additional cheese or toppings like red pepper flakes or sour cream.
