Instructions

  1. In a large pot, heat butter over medium heat.
  2. Add chopped onion and sauté until soft and transparent.
  3. Toss in minced garlic and cook for another minute until fragrant.
  4. Add sliced mushrooms and cook for 5-7 minutes until they soften.
  5. Pour in the broth and bring to a boil.
  6. Reduce heat and let it simmer for 15 minutes.
  7. Use an immersion blender to puree the soup to your desired texture.
  8. Stir in heavy cream and season with salt and pepper to taste.
  9. Simmer for a few more minutes before serving.
