  • 4 large egg whites

  • 1/2 cup granulated sugar (for meringue)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pre-bake the pie crust until golden brown.
  3. In a pot, combine 1 cup sugar, cornstarch, and water; cook until thickened.
  4. Add lemon juice, zest, and egg yolks to the pot, stirring until it bubbles and thickens.
  5. Pour the lemon filling into the pre-baked crust.
  6. Whip egg whites and cream of tartar until frothy; gradually add 1/2 cup sugar until stiff peaks form.
  7. Spread the meringue over the lemon filling, sealing the edges.
  8. Bake until the meringue is golden brown.
  9. Let the pie cool completely before slicing.
