- 1/2 cup granulated sugar (for meringue)
Instructions
- Preheat your oven to 350°F (175°C).
- Pre-bake the pie crust until golden brown.
- In a pot, combine 1 cup sugar, cornstarch, and water; cook until thickened.
- Add lemon juice, zest, and egg yolks to the pot, stirring until it bubbles and thickens.
- Pour the lemon filling into the pre-baked crust.
- Whip egg whites and cream of tartar until frothy; gradually add 1/2 cup sugar until stiff peaks form.
- Spread the meringue over the lemon filling, sealing the edges.
- Bake until the meringue is golden brown.
- Let the pie cool completely before slicing.
