- 2 cups fresh broccoli florets
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup shredded cheddar cheese
- 1/2 cup Greek yogurt (optional for added protein)
- Olive oil for cooking
- Salt and pepper to taste
Instructions
- Chop the broccoli into small florets, finely dice the onion, and mince the garlic.
- In a large pot, heat a splash of olive oil over medium heat. Add the onions and garlic, cooking until soft and fragrant.
- Stir in the broccoli and cook for a few minutes until it brightens in color.
- Pour in the vegetable broth and bring to a gentle boil. Simmer for about 10 to 15 minutes, or until the broccoli is tender.
- Blend the soup until smooth using an immersion blender or a regular blender, then return it to the pot.
- Add the shredded cheddar cheese and stir until melted. If using, mix in Greek yogurt or cooked chicken for extra protein.
- Season with salt and pepper to taste and serve hot.
Notes
Serve with crusty whole-grain bread or a fresh salad for a complete meal. Garnish with fresh herbs for added flavor.
