  • 4 cups low-sodium vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt (optional for added protein)
  • Olive oil for cooking
  • Salt and pepper to taste

Instructions

  1. Chop the broccoli into small florets, finely dice the onion, and mince the garlic.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the onions and garlic, cooking until soft and fragrant.
  3. Stir in the broccoli and cook for a few minutes until it brightens in color.
  4. Pour in the vegetable broth and bring to a gentle boil. Simmer for about 10 to 15 minutes, or until the broccoli is tender.
  5. Blend the soup until smooth using an immersion blender or a regular blender, then return it to the pot.
  6. Add the shredded cheddar cheese and stir until melted. If using, mix in Greek yogurt or cooked chicken for extra protein.
  7. Season with salt and pepper to taste and serve hot.
