- 1 lb ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks of celery, chopped
- 4 cups beef broth
- 1 cup milk
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onions, carrots, and celery and sauté for about 5 minutes until softened.
- Add diced potatoes and pour in the broth. Bring to a boil.
- Reduce heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in milk and seasoning. Let it simmer for a few more minutes.
- Taste and adjust seasoning as needed before serving warm.
Notes
This soup tastes even better the next day as the flavors meld together. Consider adding toppings like shredded cheese or fresh herbs.
