Ingredients

  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 Tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless, skinless chicken breasts
  • 4 slices mozzarella cheese
  • 2 avocados, diced
  • 3 roma tomatoes, diced (any tomato will work)
  • 1/4 cup fresh chopped basil
  • Salt and pepper, to taste
  • Balsamic vinegar, for drizzling (optional)

Instructions

  1. In a medium-sized bowl, whisk together balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper. Add the chicken breasts and coat well. Marinate for 30 minutes.
  2. In a small bowl, combine avocado, tomato, basil, and salt and pepper to taste. Set aside.
  3. Heat the grill to medium-high heat. Grill the chicken for about 6 minutes on each side, or until cooked through and no longer pink in the center.
  4. Top the grilled chicken with mozzarella cheese, then spoon the avocado-tomato-basil mixture on top.
  5. Drizzle with additional balsamic vinegar if desired and serve immediately.

Notes

  • Marinate the chicken longer (up to 2 hours) for deeper flavor.
  • Use cherry tomatoes if roma tomatoes are not available.
  • Fresh mozzarella adds a creamier texture, but sliced works well too.
  • Best served immediately to keep the avocado fresh and vibrant.
