Grilled California Avocado Chicken is a flavorful dish featuring juicy balsamic-marinated chicken breasts topped with melted mozzarella, fresh avocado, ripe tomatoes, and basil for a refreshing summer meal.

- 3/4 cup balsamic vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 Tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 boneless, skinless chicken breasts
- 4 slices mozzarella cheese
- 2 avocados, diced
- 3 roma tomatoes, diced (any tomato will work)
- 1/4 cup fresh chopped basil
- Salt and pepper, to taste
- Balsamic vinegar, for drizzling (optional)
Instructions
- In a medium-sized bowl, whisk together balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper. Add the chicken breasts and coat well. Marinate for 30 minutes.
- In a small bowl, combine avocado, tomato, basil, and salt and pepper to taste. Set aside.
- Heat the grill to medium-high heat. Grill the chicken for about 6 minutes on each side, or until cooked through and no longer pink in the center.
- Top the grilled chicken with mozzarella cheese, then spoon the avocado-tomato-basil mixture on top.
- Drizzle with additional balsamic vinegar if desired and serve immediately.
Notes
- Marinate the chicken longer (up to 2 hours) for deeper flavor.
- Use cherry tomatoes if roma tomatoes are not available.
- Fresh mozzarella adds a creamier texture, but sliced works well too.
- Best served immediately to keep the avocado fresh and vibrant.
