Ingredients

  • 4 boneless chicken breasts
  • 1 lb baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth
  • Salt to taste
  • Pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the halved baby potatoes on top of the chicken.
  3. In a small bowl, mix together minced garlic, grated Parmesan cheese, chicken broth, salt, pepper, and Italian seasoning.
  4. Pour the mixture over the chicken and potatoes, ensuring everything is well-coated.
  5. Set the crockpot to low for 6-7 hours or high for 3-4 hours.
  6. Once done, allow it to rest for 10 minutes before serving.
  7. Garnish with fresh parsley or additional Parmesan cheese if desired.

Notes

Cut baby potatoes in half for even cooking. You can add heavy cream for a creamier sauce.
