Ingredients

  • 2 cups sweet corn (fresh or canned)

  • 1 cup shredded cheese (cheddar or your choice)
  • 1 bag Fritos, crushed

Instructions

  1. In a large mixing bowl, whisk together sour cream, mayonnaise, and taco seasoning.
  2. Add sweet corn, diced red bell pepper, sliced green onions, and shredded cheese. Stir gently until well coated.
  3. Cover the bowl and refrigerate for at least 20 minutes to let flavors develop.
  4. Just before serving, fold in the crushed Fritos to keep them crispy.

Notes

For a fresher taste, use grilled corn instead of canned. Store salad and Fritos separately to maintain crunch.
