- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- Pinch of salt
- 1 large egg
- 1 cup milk
- 1/2 cup vegetable oil
- Zest of 1 orange
- 1 1/2 cups fresh cranberries
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together egg, milk, vegetable oil, and orange zest.
- Combine wet and dry ingredients gently without overmixing.
- Fold in cranberries.
- Spoon batter into muffin tin, filling each cup two-thirds full.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
For best flavor, use fresh cranberries. Coarse sugar on top adds a lovely crunch.
