French Onion Beef Short Rib Soup

Ingredients

  • 2 pounds beef short ribs
  • 3 large onions, sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 2 sprigs thyme
  • 2 bay leaves
  • Crusty bread, for topping
  • Cheese, such as Gruyère or mozzarella, for topping

Instructions

  1. In a large pot, sear beef short ribs until browned, then remove from pot.
  2. Add sliced onions to the pot, cooking until they are soft and golden brown.
  3. Add minced garlic and cook for one minute.
  4. Return short ribs to the pot, pour in beef broth, and add thyme and bay leaves.
  5. Bring to a boil, then reduce heat and let simmer for 120 to 180 minutes until meat is tender.
  6. Remove bay leaves, shred beef, and return it to the pot.
  7. Ladle soup into bowls, top with toasted bread and cheese, and broil until cheese is bubbly and golden.

Notes

Cook onions low and slow for the best flavor. Use quality beef broth for richness. Broil cheese until just melted for a gooey topping.
