  • 4 cups powdered sugar
  • 1 cup freeze-dried strawberries
  • 20 golden Oreos

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking pan with non-stick cooking spray and set aside.
  2. Beat 1 stick of room temperature butter in a large bowl with an electric mixer until smooth. Add the granulated sugar and beat until creamy. Add the egg whites and whole egg and beat until fluffy, about 2 minutes on high speed.
  3. Pour in the milk, strawberry jello powder, and vanilla extract and beat until combined.
  4. Whisk the flour, baking powder, baking soda, and salt together in a separate bowl. Add to the wet mixture and beat on low speed until just combined.
  5. Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely for at least 1 hour before frosting.
  6. For the frosting, beat 2 sticks of softened butter on medium speed until creamy. Add heavy cream, vanilla, and salt, then gradually mix in powdered sugar until light and fluffy.
  7. Crush golden Oreos and freeze-dried strawberries together in a Ziploc bag until crumbly. Add 4 tablespoons melted butter, seal, and toss to coat.
  8. Spread frosting over cooled cake, then sprinkle the strawberry crunch topping evenly across the surface. Slice and serve.
