A refreshing and protein-packed ice cream made from cottage cheese, perfect for summer.
Ingredients

- 2 cups cottage cheese (full-fat, such as Good Culture)
- 1/3 cup liquid sweetener (sugar-free honey or agave syrup)
- 2 tbsp peanut butter (or almond butter or cashew butter)
- 1 tsp vanilla extract
- 2 tbsp chocolate chips
Instructions
- Place the cottage cheese in a blender and blend on high speed for 1-2 minutes until smooth and creamy.
- Add your sweetener, peanut butter, and vanilla extract; blend again on medium speed for another minute until well mixed.
- Gently stir in the chocolate chips.
- Transfer the mixture to a freezer-safe container and smooth the top.
- Cover the container and freeze for at least 3-4 hours.
- Before serving, let the ice cream sit at room temperature for 15-20 minutes.
Notes
For best results, use full-fat cottage cheese for creaminess and experiment with different nut butters or add-ins.
