- 12 tablespoons butter
- 1 1/2 cup brown sugar
- 4 bananas, sliced lengthwise into 1/2 inch strips
- 2 mashed bananas
- 6 tablespoons butter, melted
- 2 eggs, room temperature
- 2/3 cup plain non-fat Greek yogurt
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 pan with butter.
- In a small saucepan over medium heat, melt the butter and brown sugar together until slightly glossy, about 2 minutes. Do not overcook.
- Pour the mixture evenly into the greased pan. Arrange the sliced bananas on top of the sugar mixture. Set aside.
- In a large bowl, mix together the mashed bananas, melted butter, eggs, Greek yogurt, granulated sugar, and vanilla extract until well combined.
- Stir in the baking powder and salt, then fold in the flour until just combined.
- Spread the batter evenly over the bananas in the pan.
- Bake for about 30 minutes, or until the edges are golden brown and the caramel mixture bubbles around the sides.
- Allow to cool for 10 minutes before inverting onto a large serving tray.
- Serve warm, optionally with a scoop of vanilla ice cream.
