  • 1 1/2 cup brown sugar
  • 4 bananas, sliced lengthwise into 1/2 inch strips
  • 2 mashed bananas
  • 6 tablespoons butter, melted
  • 2 eggs, room temperature
  • 2/3 cup plain non-fat Greek yogurt
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 pan with butter.
  2. In a small saucepan over medium heat, melt the butter and brown sugar together until slightly glossy, about 2 minutes. Do not overcook.
  3. Pour the mixture evenly into the greased pan. Arrange the sliced bananas on top of the sugar mixture. Set aside.
  4. In a large bowl, mix together the mashed bananas, melted butter, eggs, Greek yogurt, granulated sugar, and vanilla extract until well combined.
  5. Stir in the baking powder and salt, then fold in the flour until just combined.
  6. Spread the batter evenly over the bananas in the pan.
  7. Bake for about 30 minutes, or until the edges are golden brown and the caramel mixture bubbles around the sides.
  8. Allow to cool for 10 minutes before inverting onto a large serving tray.
  9. Serve warm, optionally with a scoop of vanilla ice cream.
