  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a sheet pan with cooking spray.
  2. In a large bowl, combine the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 16 one-inch meatballs and place them on the prepared baking dish.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through. Sprinkle with fresh parsley before serving.
