- 1 pound ground chicken
- 1 large egg
- 1/2 cup almond flour
- 1/2 cup grated parmesan cheese
- 1 tablespoon olive oil
- 1 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp Italian seasoning
- 1 tablespoon chopped parsley
Instructions
- Preheat the oven to 400°F (200°C). Spray a sheet pan with cooking spray.
- In a large bowl, combine the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape the mixture into 16 one-inch meatballs and place them on the prepared baking dish.
- Bake for 18-20 minutes, or until the meatballs are cooked through. Sprinkle with fresh parsley before serving.
Notes
These meatballs are versatile and can be served with zucchini noodles, cauliflower mash, or enjoyed as a snack. They can be frozen for up to three months.
