- 2 boneless, skinless chicken breasts
- 2 cans white beans (cannellini or great northern)
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 4 oz cream cheese (optional)
Instructions
- Chop the onion and mince the garlic.
- Place the chicken at the bottom of the slow cooker.
- Add the beans, tomatoes, and chopped onion on top of the chicken.
- Sprinkle in the spices and pour the chicken broth over everything, mixing gently.
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and return it to the slow cooker.
- If using cream cheese, add it now and stir until melted and combined.
- Taste and adjust the seasonings as needed before serving.
Notes
Serve with toppings like shredded cheese, sour cream, fresh cilantro, jalapeños, or avocado slices. Great with cornbread or tortilla chips.
