Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cans white beans (cannellini or great northern)
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 4 oz cream cheese (optional)

Instructions

  1. Chop the onion and mince the garlic.
  2. Place the chicken at the bottom of the slow cooker.
  3. Add the beans, tomatoes, and chopped onion on top of the chicken.
  4. Sprinkle in the spices and pour the chicken broth over everything, mixing gently.
  5. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and return it to the slow cooker.
  7. If using cream cheese, add it now and stir until melted and combined.
  8. Taste and adjust the seasonings as needed before serving.

Notes

Serve with toppings like shredded cheese, sour cream, fresh cilantro, jalapeños, or avocado slices. Great with cornbread or tortilla chips.
