Ingredients

  • 4 pounds beef short ribs
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 2 teaspoons dried thyme
  • 2 bay leaves

Instructions

  1. Season the beef short ribs with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and brown the short ribs on all sides.
  3. Transfer the browned ribs to the crockpot.
  4. In the same skillet, sauté garlic, onion, carrots, and celery until softened.
  5. Pour in red wine and simmer for a few minutes.
  6. Pour the vegetable and wine mixture over the short ribs in the crockpot.
  7. Add beef broth and toss in thyme and bay leaves.
  8. Set the crockpot to low and cook for 8 hours or on high for about 4 hours.
  9. Once done, serve with mashed potatoes or bread.

Notes

Browning the ribs adds depth of flavor. Customize vegetables as desired. Store leftovers in the fridge for up to three days.
