Ingredients

- 4 pounds beef short ribs
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups beef broth
- 2 teaspoons dried thyme
- 2 bay leaves
Instructions
- Season the beef short ribs with salt and pepper.
- In a skillet, heat olive oil over medium heat and brown the short ribs on all sides.
- Transfer the browned ribs to the crockpot.
- In the same skillet, sauté garlic, onion, carrots, and celery until softened.
- Pour in red wine and simmer for a few minutes.
- Pour the vegetable and wine mixture over the short ribs in the crockpot.
- Add beef broth and toss in thyme and bay leaves.
- Set the crockpot to low and cook for 8 hours or on high for about 4 hours.
- Once done, serve with mashed potatoes or bread.
Notes
Browning the ribs adds depth of flavor. Customize vegetables as desired. Store leftovers in the fridge for up to three days.
