  • 2 cloves minced garlic
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 2 cups chopped cooked corned beef
  • 1 cup sauerkraut
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Shredded Swiss cheese (optional, for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Pour in diced tomatoes and beef broth; bring mixture to a boil.
  5. Reduce heat, add chopped corned beef and sauerkraut; simmer for about 10 minutes.
  6. Stir in heavy cream and heat through.
  7. Season with salt and pepper to taste.
