- 4 chicken breasts
- 8 oz Brie cheese, sliced
- 1 cup cranberry sauce
- Fresh herbs (such as thyme or parsley)
- Salt to taste
- Pepper to taste
- Olive oil for searing
Instructions
- Preheat the oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Season the chicken with salt and pepper inside and out.
- Stuff each chicken breast with a slice of Brie cheese and a spoonful of cranberry sauce.
- Heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken breasts for about 5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Let rest for a few minutes before serving.
Notes
Choose chicken breasts of similar size for even cooking. Use room-temperature Brie for best melting results.
