- 4 medium-sized sweet potatoes
- 1 cup chopped apples
- 1/2 cup dried cranberries
- 1 teaspoon ground cinnamon
- 2 tablespoons brown sugar
- 1/4 cup chopped pecans (for topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and poke a few holes in each with a fork.
- Wrap the sweet potatoes in aluminum foil and bake for about 45 minutes until soft.
- In a bowl, mix together chopped apples, dried cranberries, cinnamon, and brown sugar.
- Once the sweet potatoes are done, let them cool slightly and cut them in half.
- Scoop out most of the flesh into another bowl, leaving a thin layer inside the skins.
- Mash the sweet potato flesh with the apple and cranberry mixture until smooth.
- Refill the potato skins with the mixture and top with chopped pecans.
- Bake again for another 15 minutes.
- Serve and enjoy!
