- 4 medium sweet potatoes
- 1 cup apples, diced
- 1 cup dried cranberries
- 1 tablespoon brown sugar
- Pinch of cinnamon
- 1 tablespoon maple syrup (optional)
- 1 tablespoon butter (or vegan alternative)
- Dash of salt
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the sweet potatoes; poke holes in them with a fork.
- Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
- In a bowl, mix together apples, cranberries, brown sugar, and cinnamon.
- Once potatoes are done, let them cool slightly and slice in half lengthwise.
- Scoop out most of the flesh, leaving some for texture.
- In another bowl, mix the scooped sweet potato flesh with the apple-cranberry mixture, adding maple syrup, butter, and salt.
- Spoon the mixture back into the sweet potato skins and pack it nicely.
- Return the filled skins to the oven and bake for another 15-20 minutes until heated through.
- Serve warm and enjoy!
Notes
Choose sweet potatoes that are uniform in size for even cooking. Consider using a mix of tart and sweet apples for balanced flavor. If preparing ahead, store filling and potato skins separately in the fridge.
