Ingredients

  • 4 medium sweet potatoes
  • 1 cup apples, diced
  • 1 cup dried cranberries
  • 1 tablespoon brown sugar
  • Pinch of cinnamon
  • 1 tablespoon maple syrup (optional)
  • 1 tablespoon butter (or vegan alternative)
  • Dash of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes; poke holes in them with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. In a bowl, mix together apples, cranberries, brown sugar, and cinnamon.
  5. Once potatoes are done, let them cool slightly and slice in half lengthwise.
  6. Scoop out most of the flesh, leaving some for texture.
  7. In another bowl, mix the scooped sweet potato flesh with the apple-cranberry mixture, adding maple syrup, butter, and salt.
  8. Spoon the mixture back into the sweet potato skins and pack it nicely.
  9. Return the filled skins to the oven and bake for another 15-20 minutes until heated through.
  10. Serve warm and enjoy!

Notes

Choose sweet potatoes that are uniform in size for even cooking. Consider using a mix of tart and sweet apples for balanced flavor. If preparing ahead, store filling and potato skins separately in the fridge.
