- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup melted butter
- 4 (8-ounce) packages cream cheese
- 1 ¼ cups sugar (for filling)
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix the graham cracker crumbs, ½ cup sugar, and melted butter until combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, mix the cream cheese and 1 ¼ cups sugar until smooth. Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing gently after each addition. Then, add the sour cream and lemon juice, mixing until the batter is smooth.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for about 55-60 minutes.
- When done, turn off the oven and let the cheesecake sit inside for an hour with the door slightly open.
- After that, refrigerate for at least 4 hours or overnight before serving.
