  • ½ cup sugar
  • ½ cup melted butter
  • 4 (8-ounce) packages cream cheese
  • 1 ¼ cups sugar (for filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, ½ cup sugar, and melted butter until combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, mix the cream cheese and 1 ¼ cups sugar until smooth. Add the vanilla extract and mix well.
  4. Add the eggs one at a time, mixing gently after each addition. Then, add the sour cream and lemon juice, mixing until the batter is smooth.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake in the preheated oven for about 55-60 minutes.
  7. When done, turn off the oven and let the cheesecake sit inside for an hour with the door slightly open.
  8. After that, refrigerate for at least 4 hours or overnight before serving.
