A comforting and hearty Chicken Tortilla Soup made in a Crock Pot, perfect for any time of year.
Ingredients

- 2 boneless, skinless chicken breasts or thighs
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 4 cups chicken broth
Instructions
- Place the chicken at the bottom of the slow cooker.
- Layer in the black beans, corn, diced tomatoes, onion, and garlic.
- Sprinkle chili powder and cumin over the top.
- Pour chicken broth into the slow cooker.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
- When fully cooked, shred the chicken in the pot with two forks and stir everything together.
- Serve hot and add toppings as desired.
Notes
For added richness, consider stirring in cream cheese before serving. Customize with your favorite toppings.
