Description

A comforting and hearty Chicken Tortilla Soup made in a Crock Pot, perfect for any time of year.


Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth

Instructions

  1. Place the chicken at the bottom of the slow cooker.
  2. Layer in the black beans, corn, diced tomatoes, onion, and garlic.
  3. Sprinkle chili powder and cumin over the top.
  4. Pour chicken broth into the slow cooker.
  5. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  6. When fully cooked, shred the chicken in the pot with two forks and stir everything together.
  7. Serve hot and add toppings as desired.

Notes

For added richness, consider stirring in cream cheese before serving. Customize with your favorite toppings.
