Description

  • 1 lb chicken sausage
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Fresh parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Slice the chicken sausage into bite-sized pieces and add to the skillet, cooking until browned and heated through.
  3. Remove the sausage and set aside.
  4. In the same skillet, add chopped onions and minced garlic, sautéing until fragrant.
  5. Add the orzo pasta and mix well with the onions and garlic.
  6. Pour in the chicken broth and bring to a boil.
  7. Lower the heat and let it simmer, cooking the orzo until tender.
  8. Add broccoli florets, allowing them to steam until bright green and tender.
  9. Stir back in the chicken sausage, mix well, and season with salt and pepper to taste.
  10. Serve warm, garnished with fresh parsley.

Notes

Be careful not to overcook the orzo. Fresh broccoli enhances flavor, but frozen can work if added earlier.
