A comforting and nutritious casserole combining broccoli, rice, and creamy cheese.
Ingredients

- 2 cups fresh or frozen broccoli florets
- 2 cups cooked rice
- 1 can cream of mushroom soup
- 1 cup shredded cheddar or mozzarella cheese
- Salt and pepper to taste
- Optional: ½ cup breadcrumbs for topping
Instructions
- Preheat the oven to 350°F (175°C).
- If using fresh broccoli, chop into small florets and steam or boil until tender. If using frozen broccoli, thaw in the microwave.
- Combine the cooked rice with the steamed broccoli in a large mixing bowl.
- Add the cream of mushroom soup and mix thoroughly.
- Stir in the shredded cheese and season with salt and pepper.
- Pour the mixture into a greased baking dish and spread evenly.
- Sprinkle breadcrumbs on top if desired.
- Bake for 30 minutes or until bubbly and golden on top. Let cool slightly before serving.
Notes
Feel free to add other vegetables for added nutrition and flavor. Store leftovers in an airtight container in the fridge for 3-5 days.
