Ingredients

  • 1 pie crust (store-bought or homemade)
  • 3 ripe bananas
  • 2 cups milk
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Additional sugar for whipped cream

Instructions

  1. Prepare the pie crust according to package instructions or your recipe.
  2. In a saucepan over medium heat, combine milk, sugar, and cornstarch, stirring constantly until thickened.
  3. In a separate bowl, whisk together eggs, then gradually add a small amount of the hot mixture to temper.
  4. Mix the tempered eggs back into the saucepan and cook for a few more minutes. Remove from heat and stir in vanilla extract.
  5. Allow the filling to cool slightly before proceeding.
  6. Slice ripe bananas and layer them at the bottom of the cooled crust.
  7. Pour the creamy mixture over the banana slices and spread evenly.
  8. Chill the pie in the refrigerator for at least 2 hours to set.
  9. Whip the heavy cream with a little sugar until stiff peaks form and spread it on top of the pie.
  10. Garnish with more banana slices if desired before serving.

Notes

For a sweeter whipped cream, add powdered sugar during mixing. Experiment with different crusts or add chocolate for variations.
