- 1 pie crust (store-bought or homemade)
- 3 ripe bananas
- 2 cups milk
- 3/4 cup sugar
- 1/4 cup cornstarch
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Additional sugar for whipped cream
Instructions
- Prepare the pie crust according to package instructions or your recipe.
- In a saucepan over medium heat, combine milk, sugar, and cornstarch, stirring constantly until thickened.
- In a separate bowl, whisk together eggs, then gradually add a small amount of the hot mixture to temper.
- Mix the tempered eggs back into the saucepan and cook for a few more minutes. Remove from heat and stir in vanilla extract.
- Allow the filling to cool slightly before proceeding.
- Slice ripe bananas and layer them at the bottom of the cooled crust.
- Pour the creamy mixture over the banana slices and spread evenly.
- Chill the pie in the refrigerator for at least 2 hours to set.
- Whip the heavy cream with a little sugar until stiff peaks form and spread it on top of the pie.
- Garnish with more banana slices if desired before serving.
Notes
For a sweeter whipped cream, add powdered sugar during mixing. Experiment with different crusts or add chocolate for variations.
