Description

Thick slices of banana bread transformed into decadent French toast by soaking in a rich vanilla custard and pan-frying until golden brown and crispy outside with a tender, custardy interior


Ingredients

  • 4 large egg yolks
  • 1 cup (8floz/225ml) whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 78 slices banana bread
  • Butter for cooking

Instructions

  1. In a medium bowl, whisk together the egg yolks, milk, vanilla, cinnamon, and salt. Pour into a shallow baking dish
  2. Slice the banana bread about ¾ inch (2cm) thick and lay it in the custard
  3. Allow to soak for 15 minutes and then flip the slices over and let the other side soak for 15 more minutes
  4. Heat a large skillet over medium-low heat. Once hot, add a bit of butter to the skillet
  5. Cook 2 or 3 slices of banana bread at a time for about 3 minutes per side, until golden brown, firm, and cooked through
  6. Serve warm, with maple syrup and fresh berries or sliced bananas

Notes

  • Use day-old banana bread for best results as it holds up better when soaking
  • Don’t rush the soaking process – proper absorption creates the perfect custardy texture
  • Keep cooked slices warm in a 200°F oven while cooking remaining batches
