Description
Thick slices of banana bread transformed into decadent French toast by soaking in a rich vanilla custard and pan-frying until golden brown and crispy outside with a tender, custardy interior

- 4 large egg yolks
- 1 cup (8floz/225ml) whole milk
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 7–8 slices banana bread
- Butter for cooking
Instructions
- In a medium bowl, whisk together the egg yolks, milk, vanilla, cinnamon, and salt. Pour into a shallow baking dish
- Slice the banana bread about ¾ inch (2cm) thick and lay it in the custard
- Allow to soak for 15 minutes and then flip the slices over and let the other side soak for 15 more minutes
- Heat a large skillet over medium-low heat. Once hot, add a bit of butter to the skillet
- Cook 2 or 3 slices of banana bread at a time for about 3 minutes per side, until golden brown, firm, and cooked through
- Serve warm, with maple syrup and fresh berries or sliced bananas
Notes
- Use day-old banana bread for best results as it holds up better when soaking
- Don’t rush the soaking process – proper absorption creates the perfect custardy texture
- Keep cooked slices warm in a 200°F oven while cooking remaining batches
- Medium-low heat prevents burning while ensuring the custard cooks through
- Serve immediately for best texture and temperature
