Description

A comforting autumn dish combining savory sausage, tender pasta, and sweet roasted squash.


Ingredients

  • 1 medium spaghetti squash
  • 1 pound Italian sausage
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil inside the squash and sprinkle with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for 30 to 40 minutes until soft.
  5. In a large skillet, heat over medium heat and add the Italian sausage; cook until browned, breaking it apart.
  6. Add garlic and onion to the skillet and sauté until the onion is soft.
  7. Stir in the diced tomatoes and Italian seasoning; let it simmer for about 10 minutes.
  8. Once the squash is ready, use a fork to scrape out the flesh into strands and add to the sausage mixture.
  9. Toss to combine and serve warm topped with grated Parmesan cheese.

Notes

Use fresh spaghetti squash and adjust seasoning to taste. Feel free to experiment with different herbs or spices.
