A comforting autumn dish combining savory sausage, tender pasta, and sweet roasted squash.
Ingredients

- 1 medium spaghetti squash
- 1 pound Italian sausage
- 2 cloves garlic, minced
- 1 onion, diced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil inside the squash and sprinkle with salt and pepper.
- Place the squash cut-side down on a baking sheet and roast for 30 to 40 minutes until soft.
- In a large skillet, heat over medium heat and add the Italian sausage; cook until browned, breaking it apart.
- Add garlic and onion to the skillet and sauté until the onion is soft.
- Stir in the diced tomatoes and Italian seasoning; let it simmer for about 10 minutes.
- Once the squash is ready, use a fork to scrape out the flesh into strands and add to the sausage mixture.
- Toss to combine and serve warm topped with grated Parmesan cheese.
Notes
Use fresh spaghetti squash and adjust seasoning to taste. Feel free to experiment with different herbs or spices.
