- 1 medium apple, chopped
- 1 teaspoon ground cinnamon
- 1 tablespoon pure maple syrup, or sugar-free maple syrup
- Pinch of sea salt
- 1 ½ cups unsweetened almond milk, or milk of your choice
- 2 teaspoons chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- ½ tablespoon pure maple syrup, or sugar-free maple syrup
- 1 cup old fashioned oats, or gluten-free oats
- 2 tablespoons chopped walnuts, for topping
Instructions
- In a small saucepan over low heat, add chopped apple, 1 teaspoon cinnamon, 1 tablespoon maple syrup, and a pinch of sea salt.
- Mix to combine, cover, and cook for about 10 minutes, stirring occasionally, until apples are tender.
- Remove the lid, increase heat to medium, and cook for an additional 2-3 minutes until sauce slightly thickens and coats the apples. Remove from heat and set aside.
- In a bowl, combine almond milk, chia seeds, vanilla extract, 1 teaspoon cinnamon, nutmeg, and ½ tablespoon maple syrup.
- Add oats to the milk mixture and stir to combine.
- Divide 1/4 of the oat mixture into two 8 oz mason jars or airtight containers.
- Layer each with 1/4 of the cooked apples, then top with the remaining oats and 1 tablespoon walnuts per jar.
- Cover and refrigerate overnight.
- Serve cold, at room temperature, or warm as desired.
Notes
- Use gluten-free oats if you need a gluten-free option.
- You can substitute maple syrup with honey or another sweetener of your choice.
- For extra creaminess, use whole milk or a barista blend plant milk.
