Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together 2 cups flour, 1 cup sugar, baking powder, salt, and cinnamon.
  3. In another bowl, cream together softened butter and 1 cup sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine wet and dry ingredients, stirring until just blended.
  6. Gently fold in diced apples.
  7. For the crumb topping, mix 1/2 cup flour, 1/2 cup sugar, and melted butter until it resembles coarse crumbs.
  8. Pour cake batter into greased baking pan and sprinkle the crumb topping evenly over the batter.
  9. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow cake to cool before serving.
