Description

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the eggs to the mashed bananas and mix until well combined.
  4. Stir in the rolled oats until evenly coated.
  5. Prepare muffin tin by greasing it or lining with muffin liners.
  6. Spoon the mixture into the muffin tins, filling each about three-quarters full.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for the sweetest flavor. Consider adding vanilla extract or a sprinkle of baking powder for more fluffiness.
