- 3 medium ripe bananas
- 2 eggs
- 1 cup rolled oats
Instructions
- Preheat oven to 350°F (175°C).
- Mash the ripe bananas in a mixing bowl until smooth.
- Add the eggs to the mashed bananas and mix until well combined.
- Stir in the rolled oats until evenly coated.
- Prepare muffin tin by greasing it or lining with muffin liners.
- Spoon the mixture into the muffin tins, filling each about three-quarters full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for the sweetest flavor. Consider adding vanilla extract or a sprinkle of baking powder for more fluffiness.
